The brew water bar at the HYUNAH clubhouse features Lotus, Apax, Empirical, and Third Wave. All of them are great and have their own individual advantages, but we find we prefer working with Lotus and making our own recipes with their drops. Their recipes are also great starting points, specifically Simple and Sweet, Bright and Juicy, and the 2025 Scott Rao recipe. In our espresso machines we like to use the Lotus Light and Bright espresso recipe, diluted with double the water, two liters instead of one.
