Walnuts began as a passion project built around a simple idea: make specialty coffee that anyone can enjoy. Its founders first encountered specialty coffee while studying in the United States in 2017, an experience distinctly different from the coffee culture they knew in Japan. After returning home, they started Walnuts in 2021 as a weekend pop-up, eventually opening their first permanent space in Tokyo's Koenji neighborhood in 2023.

Today, Walnuts operates as a contemporary micro-roastery and café with an approach rooted in transparency, ethical sourcing, and respect for the producers behind each coffee. Their roasting is exceptionally light, even by modern Japanese standards, designed to amplify rather than alter a coffee's inherent character, terroir, and flavor.

Named after the street its founders lived on in America, Walnuts brings that formative experience full circle: a distinctly Tokyo roastery making thoughtful, expressive coffee without losing sight of its original goal of making specialty coffee for everyone.
