LEAVES Coffee Roasters is built around the idea of renewal. The name reflects a quiet philosophy of growth, where what has finished its role becomes nourishment for what comes next. Founded by Yasuo Ishii, LEAVES approaches coffee with the same discipline, humility, and curiosity that have shaped his unconventional path. A former professional boxer from Tokyo with over two decades in the restaurant world, Ishii discovered specialty coffee in 2010 and opened LEAVES COFFEE APARTMENT in 2016 before fully launching the roastery in 2019. Both barista and roaster are entirely self-taught, resulting in a deeply personal style that resists trends while remaining unmistakably modern.

Operating intentionally just four days a week, LEAVES focuses on maximizing the potential of each coffee, roasting for clarity, balance, and a clean, drinkable expression where acidity and sweetness coexist effortlessly. The roastery runs both a Probat UG-15 and a Stronghold S7X, blending traditional and contemporary approaches with precision. International recognition has followed, including consecutive Sprudge Annual Award nominations and a 1st runner-up finish at the JBrC 2025 Finals.
