Shoebox Coffee is a micro-roastery based in Chicago, Illinois that works diligently to produce lightly roasted coffee, free of roast defects, with excellent green sourcing behind it. Founded in March of 2025, Shoebox's original mission statement was centered around being able to scale a sustainable 3rd wave roastery without compromising on the initial roast style and quality standards. In many cases, roasteries start out with only the best of intentions, roast very light, and have great QC. All of that becomes incredibly difficult to maintain as projects take off, and the incentive to roast darker for better consistency is always there. 

As Shoebox has grown in popularity over the last year, its quality and roast level remain exactly the same as it did in the beginning. With this consistency, attention to detail, and articulated roast philosophy, Shoebox has quickly become a darling amongst fans of "ultralight" coffee enthusiasts while still being enjoyable to a broader audience. With an intense focus on clarity, acidity, and complexity, Shoebox's roast profile aims to develop a coffee to its fullest potential while leaving nothing on the table.
