Almost their entire menu is shaped by this collaboration, highlighting coffees grown, fermented, and refined in Colombia with a level of scientific intention that has redefined what is possible at origin. Native roasts with restraint and clarity, allowing Diego’s precise fermentation work to speak for itself and giving each lot a clean, articulate expression. The result is coffee that feels both vivid and thoughtful, offering a direct connection to place, process, and the people shaping Colombia’s new wave.
