Founded in 2026, Noumenon Coffee is a small-batch roasting project built around an unusually philosophical approach to coffee. At its core is a pursuit of what founder Sebastian Verrelli describes as “coffee-in-itself”: understanding a coffee not simply through flavor, but through the producer, sourcing, roasting, brewing, and broader conditions that make the final cup possible.

Roasting in exceptionally small batches, Noumenon takes an intentionally minimal approach to development, intervening as little as possible and roasting each coffee as light as its character allows. Transparency is equally central to the project, extending from sourcing and costs to brewing recommendations and roasting philosophy. Its selections range from classic washed Kenyans to rare Geshas from California, Ecuador, and Colombia.

Borrowing its name from the philosophical idea of the “thing-in-itself,” Noumenon treats coffee as more than a sensory experience: a pursuit of understanding each coffee in its fullest possible expression.
