From day one, the team at Rogue Wave has been tremendously supportive of HYUNAH, and it gives us great pleasure to announce our first collaboration with Ply Pasarj, co-owner of Rogue Wave Coffee in Edmonton, Alberta, Canada.
Ply is known not only for his precision and curiosity but for his humility and generosity in sharing knowledge. Trained in biochemistry, his approach to brewing is both scientific and sensory: a balance that has earned him a place among the world’s top competitors, including winning Canada’s National Brewers Championship in 2020 & 2025, and a fifth-place finish at the World Brewers Cup in Milan in 2021.
For this release, Ply selected the Geisha Washed Lot 8 from the legendary Carmen Estate in Panama’s Paso Ancho district.
Founded in the 1960s by Efrain and Carmen Franceschi, Carmen Estate has been passed through generations, consistently producing some of the most celebrated coffees in the world. In 2023, Carmen Estate won first place in the Best of Panama Geisha Washed Category, setting a record price of $10,500 USD per kilogram.
Nestled at high elevation along the Chiriquí Viejo River, Carmen Estate’s microclimate produces coffees of extraordinary clarity and balance. Each cherry is hand picked by the Nôbe Buglé indigenous community at peak ripeness, a process that preserves the Geisha variety’s signature aromatics and florality.
This lot, custom roasted by Ply for this collaboration, presents an elegant and high clarity expression of Carmen’s terroir. We find it beautifully structured, floral, and sweet, making it excel both as filter and espresso.
