MAME is a specialty coffee roastery and café founded by Emi Fukahori and Mathieu Theis. MAME grew out of the founders’ shared background in coffee competitions, where discipline, repetition, and constant refinement are essential. The name MAME, meaning “beans” in Japanese, reflects a philosophy centered on the fundamentals of respecting coffee at its most elemental while continuously striving to improve through experience and exchange.

Each coffee is carefully sourced, evaluated, and profiled to highlight its natural character, with an emphasis on elegance and drinkability across both filter and espresso.
