BRIGHT YELLOW IS AN INNOVATIVE BATCH PRODUCED FROM THE CASTILLO VARIETY, SOURCED FROM FARMS LOCATED BETWEEN 1,600 AND 1,900 METERS ABOVE SEA LEVEL. IT IS DEVELOPED BY THE COFFEE QUEST THROUGH ITS LOS PATIOS FERMENTATION FACILITY, LOCATED IN LA PLATA, HUILA.
THIS STATION IS DESIGNED AS A CENTER FOR INNOVATION AND RESEARCH, ENABLING IT TO SUPPORT LOCAL PRODUCERS AND GUARANTEE CONSISTENT AND HIGH QUALITY.
AFTER AN INITIAL 12-HOUR AEROBIC FERMENTATION AT THE PRODUCERS' FACILITIES, THE PULPED CHERRIES ARE TRANSPORTED TO LOS PATIOS, WHERE THEY ARE ENRICHED WITH A PEACH CONCENTRATE AND A PROPRIETARY SOLUTION BEFORE A CONTROLLED 48-HOUR FERMENTATION.
THE DRYING PROCESS THEN TAKES PLACE OVER 12 TO 16 DAYS, WITH REGULAR ROTATION, TO ENSURE OPTIMAL QUALITY.
IN THE CUP, BRIGHT YELLOW SEDUCES WITH A GOURMET AND TROPICAL PROFILE, WITH NOTES OF PEACH, PINEAPPLE AND PAPAYA, CARRIED BY A FULL AND SILKY MOUTHFEEL.
