A NEW LOT HAS ARRIVED FROM AROMA NATIVO, A PRODUCER THAT HAS BEEN GAINING ATTENTION IN RECENT YEARS.
LOCATED IN PITALITO, HUILA DEPARTMENT, AROMA NATIVO IS ONE OF COLOMBIA’S SPECIALTY COFFEE PRODUCERS KNOWN FOR COMBINING TRADITIONAL AGRICULTURAL TECHNIQUES WITH INNOVATIVE FERMENTATION METHODS.
FOUNDED BY LUIS MARCELINO, AROMA NATIVO WORKS CLOSELY WITH LOCAL FARMERS TO PRODUCE HIGH QUALITY COFFEE. THE VECI PROJECT, LAUNCHED IN 2022, SUPPORTS PRODUCERS WITHOUT THEIR OWN PROCESSING INFRASTRUCTURE BY USING A SHARED FACILITY IN PITALITO. ONLY MICRO AND NANO LOTS WITH FULL TRACEABILITY ARE HANDLED THROUGH THIS PROJECT.
THIS LOT WAS REFINED USING A HONEY DOUBLE FERMENTATION PROCESS. PERFECTLY RIPE CHERRIES ARE SELECTED AND FERMENTED IN AN ANAEROBIC ENVIRONMENT BEFORE DEPULPING. A SECOND FERMENTATION FOLLOWS, DURING WHICH NATIVE BACTERIA AND YEASTS ARE INTRODUCED TO ENHANCE VIBRANT FRUIT EXPRESSION.
THE RESULT IS A CUP CHARACTERIZED BY RICH FRUITINESS AND COMPLEXITY, OFFERING JUICY NOTES REMINISCENT OF MANDARIN AND PASSION FRUIT, ALONG WITH THE ELEGANT AROMA OF EARL GREY TEA AND A SMOOTH, SWEET FINISH.
