THIS IS ONE OF THE MOST “TAME” COFFEES WE HAVE RELEASED FROM NESTOR LASSO, THOUGH THAT SHOULD BE TAKEN RELATIVELY. BRIGHT CITRUS AND INTENSE TROPICAL FRUIT NOTES LEAD THE CUP, INTERTWINED WITH SAVORY HERBAL CHARACTERISTICS REMINISCENT OF BASIL, THYME, AND ROSEMARY. THERE IS A CONTINUAL PUSH AND PULL ON THE PALATE, NEVER FULLY SETTLING INTO A SINGLE DIRECTION.
DESPITE ITS COMPLEXITY, THIS RELEASE LEANS MORE FAMILIAR THAN SOME OF NESTOR’S PAST OFFERINGS. EXPECT CLARITY AND STRUCTURE RATHER THAN EXTREME FERMENTATION CHARACTER. IT IS ENGAGING AND THOUGHTFUL WITHOUT CROSSING INTO THE UNEXPECTEDLY SAVORY OR COCKTAIL-LIKE TERRITORY OF PRIOR LOTS.
IN BREWING, A 1:18 FILTER RATIO HIGHLIGHTS A RAPID SUCCESSION OF FLAVORS, MOVING FROM SHARP KEY LIME ACIDITY TO SAVORY HERBS AND FINISHING WITH A SUGARY, CEREAL-LIKE SWEETNESS. THE EXPERIENCE CAN FEEL SIMULTANEOUS AND SLIGHTLY DISORIENTING, WITH THE PALATE LEFT TO DECIDE THE ORDER OF IMPRESSION.
WE RECOMMEND A REST OF 30 DAYS OR MORE. ALL TESTING WAS DONE USING WATER AT 60 HARDNESS AND 20 BUFFER, HEATED TO 198F.
